We have many wild roses on our property. My husband suggested that we make rose petal jam. I had never even heard of rose petal jam – let alone ever tried to make it. I found a recipe in the Encyclopedia of Country Living. This book had been a huge help to me. I found the recipe and the kids and I set out to gather all of the rose petals we could find.
We spent a few hours gathering the petals. We had such a great time talking and spending time together. Sometimes I would have to motivate them to continue to pick. But, they were good troopers. We brought in all of our containers to the kitchen and began to clean all of the petals. This was a tedius task. My husband and I did most of the cleaning because we wanted to make sure it was done correctly. Then we boiled the petals down and began the process for the jam.
When it was all over with we had a fantastic jelly like none other I had ever tasted. I looked at all of the jars we had made as a family and once again, was thanking the Lord that we had done this as a family. Seeing the fruit of our labor was so refreshing and amazing. We gave some of the jars out as gifts.
Rose Petal Jelly Recipe:
1 cup edible rose petals
1 1/2 cups water
juice of 1 lemon
1 1/2 cups granulated sugar
1 package jell pectin
Pick rose petals and wash thoroughly.
Combine rose petals, 3/4 cup water and lemon juice – use a blender if you have one*, until smooth. Slowly add the sugar and mix well. Bring the remaining 3/4 cup water to a boil in a small saucepan. Stir in the pectin and boil for 1 minute, stirring constantly. Pour the hot mixture into the blender with the other ingredients and blend 1 minute. Pour into sterilized jars and seal. Enjoy!
*Being on the homestead, we do not have a blender, so we blended the old fashioned way with a berry turner and then mixed in a bowl really well.
